Compare bottles, not reputations

Before choosing an oil, note the line, stated variety and harvest of the sample. Two bottles from one producer can teach more than two random brands because they allow a precise question about the intended result. At a tasting, seek one aromatic difference and another in the balance of bitterness and pepperiness. Packaging can be enjoyable but should not become a description of the contents.
