Traditional Puglian dishes: a map from Bari to Salento
Puglian cooking can structure a journey when tastings follow its stops. Baking, pasta, vegetables and sea become different chapters: eating everything together obscures the differences worth discovering.

A bakery in central Bari
Panificio Adriatico stands at Via Nicola de Giosa 113 in Bari’s Murat district. Its website describes focaccia made with flour and remilled durum-wheat semolina, sourdough, tomato, olives, oregano and extra-virgin oil; it also presents bread, taralli and friselle. Reference checked on 2026-10-06: a concrete stop for comparing baked products, without treating one portion as a lunch price.
A journey begins at the bakery
In Bari, give focaccia its own pause, sitting long enough to examine the piece before continuing. Compare it with a panzerotto at another moment, shifting the question from crumb and surface to dough and filling. Two small chapters are more interesting than one huge assortment. Walks between tastings give each product its own space.
Pasta and vegetables at lunch
For lunch, choose a dish revealing both pasta and its accompaniment. First try a bite with little sauce, then a complete one, noticing how textures and flavours work together. Turnip greens suggest a connection with vegetables; a seafood preparation opens another chapter. There is no need to multiply courses: explaining one dish can offer more than three regional names on a menu.
