The town and the Sinni valley
Senise stands near the meeting of the Serrapotamo and Sinni rivers. Its historic centre preserves streets and palaces, including Palazzo Fortunato and the Senisese Ethnographic Museum. Peperone di Senise IGP and peperone crusco describe different stages: the former is the product, the latter the crisp preparation made by frying a dried pepper. Monte Cotugno and the valley
Monte Cotugno Dam forms part of the landscape around Senise. After the intimate scale of the streets, its basin opens the view across the valley. Connecting town, ingredient and water reveals Senise through different elements, without reducing the stop to a tasting or requiring a sporting activity.

The first direction links production, cooking and environment; Aliano shifts the second towards literature and landforms. Do not assign all these experiences to one day: several stops leave time for an overnight stay and genuine conversation. Tastings can form part of the route through selected contacts and sensible timing. The pepper remains an entry into a wider territory, rather than an obligatory stop between famous destinations.
