Italia.it describes nzerte: garlands threaded with needle and string to dry the peppers. It distinguishes appuntito, tronco and uncino shapes, with low water content and a sweet taste. Suggested dishes include strascinati with salted ricotta, salt cod and potatoes.

An identifiable producer, different preparations
Peperoni Pennella describes production and processing begun in 2006. Its site distinguishes fresh, dried and powdered peppers and explains manual packing of the fragile dried fruits. It provides a concrete product reference, rather than an already arranged visit.
Three textures from one ingredient
First look at the dried pepper, then taste a whole crusco and a dish using it for contrast. In the first bite, focus on the break; in the next, on how its flavour connects with pasta, potato or another accompaniment. Small portions are enough: the point is the pepper’s role.
